Day Off: Eggroll in a Bowl

I spent all day yesterday preparing for Dad to have surgery (parotidectomy) this morning. They called at 4:15 yesterday evening and told us that it would be rescheduled. So I didn’t get to do research for an article or do a recipe with some great photography, instead I spent the day running errands and getting things ready.

So today in lieu of an article, I’ll post a recipe. This is Eggroll is a Bowl.  This is the more-veggies-and-less-meat version of this recipe that is in the Budget Menu Mailer. This recipe has gotten some great reviews from Menu Mailer users.

    I made this last night! I added extra seasonings, and it was great!

    I have some leftovers, and my partner asked me to cook them egg foo young style,mwhich I am sure will be fantastic :)

    I make something similar… but it’s MUCH better using finely minced fresh ginger instead of powder. And you need garlic too. Also, if you use fatty burger, you don’t need additional fat.

    I start frying a pound of fatty burger with minced/pressed ginger and garlic, then when the burger is cooked, I toss in a whole head of shredded cabbage and stir to coat in the burger grease, then once the cabbage has wilted and starts to brown, add tamari to finish (while we avoid soy generally, the small amount in tamari doesn’t bug me – though I do get organic to avoid GMO soy).

    This is one of my hubby’s FAVORITE meals and gets a big bunch of veggies in him painlessly. It tastes just like eggroll filling to me.

  7. You mention, “homemade soy sauce replacement.” Do you have a recipe for that? My daughter can’t eat soy (and I’m not crazy about serving it anyways) and this has limited any cooking of Chinese food in my house… this recipe sounds great!

    Great budget friendly recipe. Added fresh ginger and totally agree it positively altered the recipe. Quick tip. We don’t consume many processed grains and are completely gluten free. However we did have some leftover Trader Joe’s brown rice tortillas in the fridge. Served with this recipe, the tortillas made made a delicious non-fried gf egg-roll dupe.     I had absolutely no idea. Thank you for spreading the word. I had intestinal surgery a few years back and don’t want to ever be that sick again. It’s absolutely terrifying that this could happen. The pack insures that it’s GF in more than one place. Luckily this is probably the first time I’ve had them in a year or so. Was suspicious as to what made my skin break out this week. Perhaps this is a factor.

    The rice tortillas (for me) always needed heating to be palatable anyway. I occasionally get injera (fermented Ethiopian teff flat breads- similar to sour dough in taste) from a small family business that I know uses absolutely no gluten in their kitchens (or animal products either) that might work similarly. The moral of the story/: Make it yourself or buy locally from a producer you know and trust. Thanks again for the heads up.

    My 8 year old daughter said . . .yum mom. . . its like stir fry!
    I don’t know if this is WAPF approved or not, but I added a TINY bit of sesame oil. It added a nice taste.
    Does anyone know if this is WAPF approved ?
