Summer Fruited Chicken

Before I knew what had happened, I hadn’t blogged in a week. So until my time frees up, how about some recipes? I’ll post a recipe daily until I’m able to resume a normal blogging schedule and pick back up on the Gut Health series.
This recipe is a hit with my kids. It’s quick, it’s easy, it’s delicious and it is in tomorrow’s Menu Mailer.
From the Menu Mailer, Volume 4 Week 52
Hands-on: 10 minutes
Hands-off: 6-8 hours
1 whole chicken, cut up, or the equivalent in pieces
½ tsp garlic powder
½ tsp salt
½ cup crushed pineapple, with juice
2 Tbs lemon juice
2 Tbs tamari
3 peaches, finely chopped or mashed
Place the chicken in the bottom of a crock-pot and sprinkle with the garlic powder and salt. In a bowl, combine the remaining ingredients. Pour over the chicken. Cover and cook on low for 6-8 hours.
Serve with rice and sautéed green beans. Add an extra vegetable if you need to stretch the meal.
